When Curtis Stone flipped his Michelin-starred tasting menu restaurant into a casual pie shop during the pandemic, he never expected that the flavors of his Australian childhood would find a permanent home there. But the Pie Room by Curtis Stone became extremely popular. The celebrity chef invested in a 6,000-square-foot commercial bakery in Mid-Wilshire to keep up with the demand for his savory pies stuffed with braised meats and vegetables, as well as his sweet pies, puddings, croissants and cookies.

The sprawling facilities include a viennoiserie, where croissants are laminated with butter time and again for flaky, shattering layers, as well as a chocolate room for confections, a double-decker bread oven, a proofing station and multiple rotating ovens to ensure even baking. Here’s a behind-the-scenes peek inside the bakery and a glimpse of how those pastries and other treats at the Pie Room by Curtis Stone and Gwen are made.
