Taste, Not Volume

So California is bidding to become the new America’s Dairyland (“California Milk’s New Superlative,” Jan. 29)? Why does California have to be first in everything?
As an ex-Wisconsin farm boy who has had his share of milking cows for years and feeding them good old alfalfa hay from the haymow in the barn and ensilage from the silos in the winter, I must say that perhaps California might outproduce Wisconsin in milk production, but it will never surpass Wisconsin in its milk quality or taste! How can it, when the cattle have no idea what green pasture grass is?
