Brown sugar: Today, processed sugar to which molasses has been added. It is noticeably more moist than regular sugar and has a different flavor. Dark brown sugar has more molasses than light brown sugar.

Powdered sugar (also known as confectioners’ sugar): Finely ground sugar mixed with cornstarch to prevent sticking.

Double boiler: A piece of equipment allowing gentle cooking consisting of a smaller pan set over a larger pan holding simmering water. The bottom of the smaller pan should not touch the water.

Paraffin: A type of wax that, when cooked together with chocolate, softens the texture of the cooled chocolate.

Fondant: A type of candy made by cooking sugar syrup and then kneading it to ensure creation of small, even crystals.
