This is my favorite quick and easy, great-for-company dinner. The use of vegetarian “ground meat” puts it on the table quickly and makes it healthful.

Cook instant rice according to package directions. While rice is cooking, fry up 4 coarsely chopped onions with chopped garlic and salt and pepper to taste. Mix in 1 package vegetarian “ground round.” Stir in 1 (28-ounce) can crushed tomatoes, 3 canned chopped jalapeno chiles, 1 small can chopped green chiles and some ground cinnamon, ground cloves, ground allspice, ground nutmeg and grated orange zest. Heat until boiling. Mix in 1 small jar of drained and chopped stuffed green olives and a cored, chopped green apple. Heat thoroughly. Serve over the rice.
