Having It All: Bean-Balaya

Uncle Darrow’s, a corner stand that serves Cajun and Creole food, offers samples to guide first-time visitors. If you can’t decide between the red beans and rice (wonderful spicy sauce) or the jambalaya (they call it “jumbalaya”: a combination of rice, vegetables and turkey-chicken sausage), no problem. Just order “bean-balaya,” a combination of the two. A salad, French bread and tiny containers of dressing and hot sauce come with the order.
