Ray Garcia is opening a B.S. Taqueria at the Staples Center, and yes, there will be churros

Ray Garcia, the chef behind Broken Spanish and B.S. Taqueria in downtown Los Angeles, will open a B.S. Taqueria concession stand at Staples Center on Friday. Garcia is the third high-profile chef to partner with Levy Restaurants, the company that runs the food and beverage operations at the arena, joining Ludo Lefebvre, who has a LudoBird concession stand, and Josiah Citrin’s two Dave’s Doghouse locations.

“It’s an opportunity to get people from all around the city, who are here for a game or concert, to taste a least a little of what we do, and have an understanding of my style and the style of tacos,” said Garcia. (See: Garcia’s clam and lardo taco at BS Taqueria.)

Garcia and his team will start with three tacos at the stand, including a carnitas taco, a carne asada taco and a chicken taco, all topped with the condiments served at the restaurant, including guacamole, pico de gallo and salsa roja or verde. (Sorry: no clam and lardo taco.)

Sides include heirloom corn tortilla chips, guacamole and salsa. And those churros he’s known for at the restaurants? They will be here too, served with chile chocolate sauce.

“It’s important for me to do it in a way that really kept up with the quality and integrity of the product,” said Garcia, who is using the same non-GMO landrace masa corn that he uses at the restaurants for the tortillas, along with the same recipes for the guacamole, churro batter, salsas, the carnitas, and everything else he plans to serve at the concession stand.

“I had a very aggressive opening menu,” said Garcia, who decided to scale back a little after realizing he could potentially serve 18,000 people in a single day. (See: Lakers, Clippers, Kings, Taylor Swift, Justin Bieber.)

Garcia says he’s going to get a sense of the crowd, and the concession stand system, before adding more items to the menu. But he did reveal that he tested a version of a chorizo and potato dish that resembled a nacho-chili-French-fries hybrid. And he’s thinking about finding a way to serve the chicken chicharrones from the restaurant as well.

The stand will also offer four specialty drinks, including palomas, margaritas, a black-currant lemonade and a mint cactus drink.

The B.S. Taqueria concession stand will be located on the Main Concourse adjacent to section 117, and will be open for Friday’s Laker game.
