Maybe you’ve heard of the upside-down cake. It’s a classic, where a simple cake is baked atop a pattern of fruit, usually an assortment of pineapple rings and maraschino cherries. It’s the stuff of childhood for many of us, but we don’t see it that often anymore? Why?
