Maybe you’ve heard of the upside-down cake. It’s a classic, where a simple cake is baked atop a pattern of fruit, usually an assortment of pineapple rings and maraschino cherries. It’s the stuff of childhood for many of us, but we don’t see it that often anymore? Why? The idea is great, where a layer of fruit is cooked to caramelized perfection, flavoring whatever cake is sits below (or, rather, is baked above). Try these variations that go beyond the classic, incorporating fresh mango, peach, fig and even plum.
