On Wednesday, Russ Parsons highlighted eggplants and tomatoes in his Farmers Market column, and in our story on tomatoes we offered some terrific recipes for sauce, soup and Blood Mary mix. Now, for weekend farmers marketers, here are some eggplant recipes that will put to good use some of those eggplants you toted home Saturday or Sunday. Check them out here:
