L.A. Times Test Kitchen tips: Checking your proof

We’ve been testing a lot of breads lately, and Test Kitchen intern Nina Ouni was excited to share a trick she recently learned to check on the progress as a dough rises, or ‘proofs.’

It’s a simple and ingenious little trick:

After covering the dough with plastic wrap, mark an outline of the unproofed dough with a marker. That way you can easily gauge how -- and how much -- the dough is proofing.
