Jam Preserves Taste of Apricots
California’s apricot season is coming to a close, but the Patterson variety is still available. Preserve their tangy sweet taste in this golden apricot jam. To jazz it up, stir in some figs or slivered almonds. Or spike it with a touch of brandy or orange liqueur.
FRESH APRICOT JAM
2 pounds pitted apricots
Juice of 1/2 lemon
4 1/2 cups sugar
1/2 cup chopped figs, optional
1 tablespoon brandy or Grand Marnier liqueur, optional
1/3 cup toasted slivered almonds, optional
Combine apricots, lemon juice and sugar in large saucepot. Place over low heat until sugar dissolves, then bring to boil over medium heat. Cover and simmer 20 minutes until apricots are tender.
Stir in chopped figs. Cook, uncovered, over medium heat another 20 minutes, stirring frequently. Stir in brandy and almonds. Let stand 10 minutes.
Pack in jars and refrigerate. Freeze for longer storage. Makes 4 cups.
