Sweet Rolls, Hold the Custard

These sweet rolls contain a surprise--the filling is beans, not fruit or custard. They’re from Francaise Bakery in Koreatown, which specializes in Western-style pastries with a Korean twist. The four fillings available are red bean, red bean and chestnut, white bean and green pea (mung bean). The dough is tender and light, and the sweetened bean filling is as appealing as candy.
