Porchetta Truck’s Evan Funke at This Is Not a Pop-Up
To fans of the Porchetta Truck: Evan Funke is scheduled to cook a one-night-only dinner on Wednesday at This Is Not a Pop-Up at Square One Cafe in Hollywood. Funke, who currently is running the Porchetta Truck ahead of the opening of his restaurant Bucato in Culver City, will offer a prix-fixe menu of Italian trattoria dishes -- including his porchetta.
The eight courses, for $65 per person, are: ricci di mare “in porchetta” with sea urchin, crackling, lemon, rosemary, wild fennel and lardo; lamb’s heart skewer with salsa rustica; fried artichokes with battuto and bottarga; pasta alla chitarra cacio e pepe; veal sweetbreads with Parma prosciutto, sage and brown butter; octopus in purgatorio with chick peas and green garlic; porchetta di Bucato disordinato; and Napolitana gelato -- chocolate, raspberry and pistachio gelato with chocolate chiffon and honey pistachio tuile.
Other week-long residencies at This Is Not a Pop-Up include Mark Peel of Campanile; Phillip Frankland Lee of D’Cache; Farid Zadi, the founder and Dean of Culinary Arts at Ecole de Cuisine Los Angeles; and Barbara Brass of Wolfgang Puck Catering.
