Armed with a market-driven menu that includes a list of pretzel-bunned burgers and shochu- and wine-based cocktails, Hans Röckenwagner is hitting Brentwood. The beach-loving Teutonic chef and the name behind Röckenwagner Bakery is opening Cafe Röckenwagner in the BW mixed-use complex on Barrington Avenue. It’s set to debut by the end of the month.

Other Röckenwagner locations include 3 Square Cafe in Venice and bakeries in Culver City and Mar Vista. The 1,500-square-foot Brentwood cafe was designed by Montalba Architects and features a large patio and intimate kitchen-facing bar, as well as wood work from Röckenwagner himself. The open, light-filled room also includes a to-go counter and pastry case (featuring breakfast pastries, desserts, bread and pretzels).

Marketed as “a modern city bistro,” the menu mixes influences from California, Asia and Europe, with dishes such as steamed mussels with chorizo, pan-roasted red snapper with nasturtium broth, grilled octopus with pickled ginger, Jidori chicken with lemon pomme puree, short rib ravioli, double-cut pork chop with whipped polenta and pork jus and pepper crusted beef short ribs.

Röckenwagner’s pretzel burger with Swiss cheese, caramelized onions, lettuce and tomato is on the menu along with other burgers, such as the BW Cast Iron beef burger with Provolone, shiitake, onion rings and miso-Russian sauce; a lamb burger with roasted peppers and harissa mayo; and a quinoa and hummus burger with roasted peppers and romesco.

Café Röckenwagner will offer a selection of beer and wine, as well as low-alcohol cocktails. There’s a thyme-shochu number with muddled cucumber and Lillet Blanc; Zucca liqueur is mixed with Amaro CioCiaro, smoked honey and ginger; and a black muscat wine cocktail with Cherry Heering, Andalo liqueur and bitters.
