Foie gras cooking class, Cecile Delarue at L’Assiette with more foie
Salted, a new online cooking school, is hosting an educational pop-up dinner and cooking class Tuesday and Wednesday evenings. This month’s featured chefs include Eric Greenspan (The Foundry, Greenspan’s Grilled Cheese) and Rose Lawrence (Red Bread). The classes and pop-up dinners will pay tribute to California lifting the ban on foie gras, and feature how to properly sear foie gras, how to make foie gras grilled cheese, how to cook a perfect steak, how to make the perfect pastry pie dough, how to make foie gras strawberry pop tarts with black pepper icing and more. L’Assiette Steak Frites is honoring French journalist and author Cecile Delarue, and her cookbook “The Everything Easy French Cookbook” on Tuesday. The event will begin at 7 p.m. with passed hors d’oeuvres, featuring recipes from Delarue’s cookbook, including pâté de campagne and gougères paired with Kir Royals. A sit-down dinner will follow, and include your choice of the restaurant’s signature sous-vide steak frites ($48) or the steak rossini, served with coulotte steak, foie gras, shaved black truffles and beef tallow fries ($78).
