RESTAURANTS

New President: Wayne Mascotti is the new president and chief operating officer of Specialty Restaurants in Anaheim, which owns and operates 46 eateries in 15 states.
Mascotti is a graduate of the Culinary Institute of America in Hyde Park, N.Y. But he is a longtime Californian, having spent most of the past 20 years working for the Rusty Pelican chain of seafood restaurants.
One of Specialty’s best-known restaurants in Southern California, the Castaway in Burbank, is about to reopen after having been nearly destroyed last year in an arson fire.
